Viva Peruvian Restaurant, which celebrated its grand
opening on July 18, 2015 in the former Fiesta Cove location,
is the culmination of a twenty-year-long career in the Peruvian restaurant
business for husband and wife team Elaine and Alberto Rojas.
Viva Peruvian Restaurant is the 5th Peruvian restaurant owned and operated
by the Rojas', with the first restaurant, Fiesta, having opened in 1995.
As a young man from Peru, Alberto dreamed of someday
creating a welcoming place where diners in America could learn about
and sample the delicious and comforting dishes of his beloved homeland.
That dream was realized in the form of his first restaurant,
Fiesta. After its opening, the word about Fiesta quickly spread, both to people looking for a new
type of ethnic food to try, and to those yearning for the comforting tastes of
their home region. Fiesta quickly developed a reputation for having delicious authentic cuisine,
a down-to-earth, family-friendly atmosphere, and fair prices.
Inspired by the success of Fiesta (later known as Fiesta Atlantic), Fiesta Cove was opened in 1999.
With two bustling restaurants in Stamford and many satisfied guests,
Fiesta was expanded to include a third location,
Fiesta Limeña, in Norwalk, CT in 2006. The newest venture,
Fiesta on Main,
opened in February 2017.

feature the same delicious Peruvian food and friendly service,
while each location's Peruvian-trained chef offers his own interpretation
of this vibrant cuisine. Each location features different specials,
posted daily on each web site, which showcase each chef's unique talents.
We are committed to serving authentic food that captures the essence of
Peruvian cuisine with its rich, multi-ethnic influences in a
comfortable, family-friendly environment.
Each meal starts with our famous aji- a green sauce made from a
secret recipe that includes hot chili peppers. Guests can enjoy
our sauce with bread to begin their meal or to complement any of our
dishes. Customers enjoy it so much we now offer this delicious sauce
in three sizes to take out.
After sampling our aji sauce and bread, customers can enjoy one of our many flavorful
appetizers such as Causa con Pollo o Camarones- a delectable molded potato
dish stuffed with creamy shrimp or chicken salad, or Papa a la Huancaina-
a Peruvian potato salad of boiled potatoes smothered in a mildy spicy
Customers can then enjoy beloved favorites such as Lomo Saltado- tender strips of pepper
steak with onions and tomatoes served over fries with a side of rice or Milanesa de Pollo-
a generously sized tender chicken cutlet, fried until puffed and crispy
yet juicy, served with white rice and salad.
Each meal can be rounded out with our delicious coffee or authentic Peruvian beverages
and traditional desserts such as flan or alfajores- delicate layered cookies with a sweet
filling reminiscent of dulce de leche topped with a light dusting of confectioner's sugar.
